I love my crock pot. I use it ALL the time and definitely year round. Slow cookers are little life savers, especially on busy days! It’s such a good feeling to get dinner prepped and out of the way first thing in the morning. The extra bonus is smelling it cook all day!

Not only is this recipe super convenient it is delicious. The ranch flavor is just perfect. Not too overpowering at all. My kids devour this and so does my hubby. It’s on the dinner rotation often at my house. 🙂

Crock Pot Creamy Ranch Chicken

Delicious creamy ranch chicken, potatoes and carrots slow cooked in the crock pot.

Ingredients

  • 6 medium Russet potatoes cut into 2-inch pieces
  • 2 cups baby carrots
  • 4 boneless skinless chicken breasts
  • salt and pepper to taste
  • 1 large can (23 ounces) condensed cream of chicken soup
  • 1 packet (1 ounce) dry ranch dressing mix
  • 1/2 cup milk
  • fresh chopped parsley optional

Instructions

  • Spray a large crock pot (I use a 7 quart) with non-stick spray. Place cut potatoes and baby carrots in the bottom of crock pot. Lay chicken breasts over the top. Season with salt and pepper.
  • In a medium bowl, whisk together cream of chicken soup, dry ranch dressing mix and milk. Pour this mixture evenly over the chicken.
  • Cover with lid and cook on high heat 5 to 6 hours OR on low heat 8 to 9 hours. (*It is important to not remove the lid during the entire cook time.) Top each serving with fresh chopped parsley, if desired. Enjoy!

  3. I’m making this tomorrow do the carrots need to be the hard ones or the ones in the can? Also is the ranch pack your referring to is it the dressing or dry ranch pack?

      1. Can I use the dry ranch dip? I never buy the dressing mix. It’s not as thick and tasty as the dip. I’m thinking about making this tonight.

  5. if you guys are having trouble with thin soup, make a roux and just add the broth from the soup. i did it, even though my ‘sauce’ wasnt that thin and it added a level of depth i was looking for! if your soup is super thin, just make a thicker roux! such a great method to know!

    1. No. Just leave it alone and stir when it’s done. Removing the lid during cooking lets a lot of the heat escape and can result in having to cook it longer. 🙂

  6. This was very good. Doubled the recipe and used cream of mushroom soup. I used your recipe for the ranch dressing. I also used frozen chicken. Mine was not watery at all. I would definitely make again.

  7. I have done this recipe as is and with some variations and my family loves it. I have used pork chops and chicken thighs and it turned out just as good as the chicken breasts. I have added frozen peas and green beans as well. The biggest change I made was when I was out of cream of chicken soup. I substituted a small can of cream of mushroom soup and a jar of heinz chicken gravy. Just as tasty. I recommend reduced sodium soups if you don’t like a lot of salt. Great recipe.

  8. I made this today but I had to use one can of cream of chicken and one can of cream of potato and it was DELICIOUS!! Next time I will make this with turkey breast and serve it over stuffing bc it is like Thanksgiving in a bowl

  9. Hey! Great recipe! I made this with several adjustments. First I only buy small cans of cream of chicken soup, and only had one Cream of Chicken, so I used that and a Cream of Mushroom. I sliced up a whole large carrot, and added a whole onion. I used the home made ranch dry mix, I just made half of what that recipe calls for and it was exactly 3 TBSP. I added the chicken completely frozen straight out of the freezer, and it turned out not runny at all, just like a thick gravy. Also, an hour before it was done (I cooked for a total of 5 hours…I was hungry!) I added a can of green beans and half a block of cream cheese. This was a delicious recipe, thanks for sharing!

  10. My family loves this meal and I always have to double the recipe. I used boneless skinless chicken thighs instead of breast ( a little cheaper and easy to dish out). I am making this every two weeks. Great recipe.

  11. OK, so I made this last night, and I was wrong about the cook times, although I still think it wouldn’t need quite as long as the recipe states. I cooked mine for 5 hours on low and when I went home, the veggies were still crunchy. I think I didn’t realize quite how full the slow cooker would be with the veggies (I used red skin potatoes and baby carrots).

    Anyhow, I was on my way to the gym, so I put it to high for another hour or so and that seemed to be plenty.

    The sauce ended up quite thin from all the liquid released from veggies and chicken. Also, b/c of this, the sauce seemed pretty bland. Next time I would consider using another packet of ranch and maybe even reducing the milk or eliminating completely.

  12. OMG!! I wish that was in the directions b/c I made the homemade ranch dressing recipe on the site and put the WHOLE thing in my crock pot!! It wasn’t until i read the comments after that i saw it was only 3 TBSP!!!

  15. Holly, Thanks for this wonderful recipe !
    I added 1/2 an onion in large chunks and for the last two hours add two cups of broccoli florets. Add pepper and oregano to add a little more flavor.
    Have made this three times now and the wife and kids just plain love it !!!
