These Garlic Butter Steak Bites are tender morsels of steak sautéed in a pan, to your preferred temperature, with fresh garlic, parsley, and butter. These four simple ingredients come together to make an elegant meal. If you have been with me and my blog for a while now, then you will know that I love many variations of steak and chicken bites. Each recipe is flavorful, easy to prepare, and can go with so many dinners!
WHAT CUT OF STEAK SHOULD I USE?
One of the best parts about this recipe is that you can use essentially any cut of steak. If there is one that you prefer, then my suggestion is to go for it! Sirloin steak is affordable and tastes great. If you’re not a fan of sirloin here is a list of different cuts of meat that go great with this recipe:
- Sirloin: a prime steak best when served medium-rare; very flavorful.
- Flat iron: best cooked medium to prevent toughness; affordable and intensely flavorful.
- Filet mignon: tender steak that is best served rare; most expensive steak.
- Rib-eye: one of the most prized types of beef, very flavorful, juicy, and soft.
- Skirt: best cooked rare or medium-rare at most; very tough and muscle-heavy.
- Bavette and flank: cheap steak best when served no more than medium.
HOW DO I COOK THE STEAK?
All that you need is a sauté pan and some heat, and this delectable steak dinner is ready to prepare. If you have a cast-iron skillet then it is a MUST to cook the bites of steak in your skillet. It will give your meat that little extra crust from the cast-iron that brings another layer of flavor. This recipe is the perfect excuse to buy a cast iron skillet if you don’t have one. 😉
TEMPERATURE GUIDE FOR COOKING STEAK BITES:
I am a firm believer that a little bit of pink in your steak keeps it juicy and flavorful. Medium rare. Not everyone likes pink, or a little bit of red in their steak, so cook accordingly to your taste. If you are unsure of what temperature to cook, or the time to cook the meat, here is a list of temperatures and cook times:
- Blue: cook for about 1 to 1 ½ minutes for a dark, almost purple, steak that will feel spongy with no resistance.
- Rare: cook for about 1 ½ to 2 minutes for a dark red, soft and spongy steak with little resistance.
- Medium-rare: cook for about 2 to 3 minutes for a pink, soft and spongy steak that is slightly springy.
- Medium: cook for about 4 to 5 minutes for a pale pink, firm and springy steak.
- Well-done: cook for about 5 to 5 ½ minutes for only a trace of pink, spongy and slightly springy steak.

Garlic Butter Steak Bites
- 1 Tablespoon olive oil
- 2 pounds sirloin steak (or your favorite cut of steak)
- salt and pepper, to taste
- 1/2 cup salted butter, softened
- 2 cloves minced garlic
- 1 Tablespoon freshly chopped parsley
- Cut steak into bite-size pieces. Season with salt and pepper. In a small bowl, mix together the butter and minced garlic. Set aside.
- Heat the olive oil in a large cast iron skillet over high heat. (If you don't have a cast iron skillet just use a regular large skillet.)When the pan is hot, add the steak in one layer. (You will want to cook the steak in two batches to prevent over-crowding the pan.)
- Stir and cook steak to your liking. We prefer medium so we cook ours for about 4 minutes. (See the above temperature guide.)During the last minute of cooking, add half the garlic butter to the steak bites. Continue to stir and cook until butter melts. Immediately remove from heat. Sprinkle evenly with half of the chopped parsley.
- Repeat cooking process with remaining steak bites, garlic butter and parsley.Serve steak bites warm and enjoy!
