Lunch Lady Brownies
Lunch Lady Brownies are moist, full of chocolate flavor, and absolutely delicious. The best dessert for potlucks and parties!

Lunch Lady Brownies are the best brownies ever. They’re like the ones the lunch ladies served for school lunch dessert, but this homemade version is better!

I’ve been on a brownie kick lately. I don’t know what’s come over me. Maybe it’s the stress of selling our house (which we finally sold. Yay!) and it could also be the pre-stress of building the new one soon. I’m not quite sure. All I know is that these brownies were sent from heaven above. And that I ate four. For real. 😉

These Lunch Lady Brownies are simply incredible. Cake-like, filled with chocolate flavor, and totally amazing. Apparently, it’s an old recipe from the sweet ladies who served our lunches in Elementary school.
I honestly don’t remember the brownies in Elementary school, but I do remember the dinner rolls and pizza. Do you remember how good those rolls were? After I would eat mine I would go around the lunch table asking everyone else if I could have theirs. Haha.

Ingredients

- 1 cup salted butter, melted
- 1/2 cup unsweetened cocoa powder
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 4 large eggs, beaten
- 4 teaspoons vanilla extract
Frosting
- 1/4 cup salted butter, softened
- 1/4 cup unsweetened cocoa powder
- 1/4 cup milk (I use 2%)
- 3 cups powdered sugar
Instructions
Preheat oven to 350° F. Line a 9×13-inch baking dish with parchment paper. Set aside.
Pour the melted butter and cocoa powder in a large bowl. Using an electric hand-mixer, mix until smooth.
Add the flour and sugar. Beat together, then add eggs and vanilla. Mix until just combined. Don’t over mix. (Batter will be thick.)

Pour batter into the prepared baking dish and spread out evenly. Bake 25 to 28 minutes or until toothpick inserted in center comes out mostly clean. Remove from oven and allow to stand for 15 minutes before frosting. You want the brownies slightly warm when you frost them!
Chocolate Frosting
Beat together all of the frosting ingredients until smooth. Spread over the warm brownies. Let brownies cool completely before cutting and serving. Enjoy!

I made these brownies today…do NOT ask how many calories are in them! More importantly, I am of the age where our lunch ladies DID make these brownies and now I understand why the portion sizes were what they were! These are SUPER simple to make and turned out WONDERFUL! My daughter who is not a cake or frosting fan…DO NOT EVEN KNOW WHERE SHE GETS THAT FROM…SHE LOVED THIS! It’s nice that they aren’t that processed overly sweet tasting things that you get out of a box mix or the disgusting one’s from the stores bakery section.
If you follow the recipe, exactly as it states, you will have success with these.
As far as the dinner rolls go…I have the recipe for those! They are SUPER simple and can be made in a bread machine!
Thanks for sharing the recipe…you brought back happy memories from my childhood from LONG AGO!
Would you please share the dinner roll recipe?? Would love to have it. Thank you bunches, Connie Gilliam
I have made them twice and I am in love ♡ This will be one of my fireproof, sure to please recipe! I added white chocolate chips and walnuts to the batter and it turned out delicious! BAKE THESE BROWNIES!
Made these and they were ok. I felt like they were missing something maybe salt? Kids still enjoyed them
Good recipe. tasted great. I used just a bit more milk but great.
Great taste. I used a bit more milk but great.
How do u store these? Room temp? Airtight container? And why did u line w foul?
I store these in an airtight container in my fridge because I like them cold too. 🙂 Foil is for easy cleanup!
Rich and rewarding!
Can I use parchment paper instead of foil in the baking pan?
Made these brownies best I have ever had.
I just finished making these brownies and I added pecans to a batch. They are delicious.
Just made these. I used the spoon, tap, level/scrape method for the flour and added 1/8 tsp salt. I made half a batch in an 8×8 and baked 25 minutes. They came out really great! I also added a peanut butter/powdered sugar layer of topping so overall they were a little too rich with the double icing. Lol I cut the half batch into 12 pieces but I think I’d go with 16 next time. And possibly half the icing.
Thanks for the recipe! It was fast and easy and delicious, so definitely a keeper.
I love this recipe!! I just made them for the second time in two weeks, today being my birthday. 🙂 Anyway, today they are super pebbly. Did I overmix in the butter/flour stage? I’m trying to figure out what happened. I’m still baking them since I’m on a time crunch and will let you know.
I got out my recipe; cause this sounded similar and it is very close to mine. Mine has only 1 c flour and has 1/2 tsp baking powder, and 1/4 tsp salt and 2 TBSP vanilla extract. I will definitely try this!
Thank you so much for this wonderful recipe. I would love to get the peanut butter cake & dinner roll recipes. Thanks again. Connie
I made these this morning………….very simple recipe and they were SO DELICIOUS!!!!!!
I made these and added a bit of cinnamon…..SO YUMMY!!!
just wondering….for tailgating, would you make Lunch Lady Brownies or Texas Sheetcake (cake, muffins, or cookies)?
Yum! Can you please tell me how you cut your brownies so perfectly? mine never come out this pretty? Thank you
Hi Tara! I like to use a plastic knife to cut brownies, and use a sawing motion when cutting. That helps them stay together and look nice 🙂
I love this recipe I have used it over and over! Delicious
This is a great recipe, and I’ve used it many times. I’ve always heard it called Texas sheet cake.
It doesn’t ask for salt or salted butter but still delish!
I always use salted butter 🙂 Glad you enjoyed them!
Do I need to add salt if I’m using unsalted butter?
Yes, I would add a 1/2 teaspoon of salt
These are the best.. chewy brownies every! I made them yesterday.. My girls ate all of them. I am making a second batch today. This recipe is a keeper
