Lunch Lady Brownies
Lunch Lady Brownies are moist, full of chocolate flavor, and absolutely delicious. The best dessert for potlucks and parties!

Lunch Lady Brownies are the best brownies ever. They’re like the ones the lunch ladies served for school lunch dessert, but this homemade version is better!

I’ve been on a brownie kick lately. I don’t know what’s come over me. Maybe it’s the stress of selling our house (which we finally sold. Yay!) and it could also be the pre-stress of building the new one soon. I’m not quite sure. All I know is that these brownies were sent from heaven above. And that I ate four. For real. 😉

These Lunch Lady Brownies are simply incredible. Cake-like, filled with chocolate flavor, and totally amazing. Apparently, it’s an old recipe from the sweet ladies who served our lunches in Elementary school.
I honestly don’t remember the brownies in Elementary school, but I do remember the dinner rolls and pizza. Do you remember how good those rolls were? After I would eat mine I would go around the lunch table asking everyone else if I could have theirs. Haha.

Ingredients

- 1 cup salted butter, melted
- 1/2 cup unsweetened cocoa powder
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 4 large eggs, beaten
- 4 teaspoons vanilla extract
Frosting
- 1/4 cup salted butter, softened
- 1/4 cup unsweetened cocoa powder
- 1/4 cup milk (I use 2%)
- 3 cups powdered sugar
Instructions
Preheat oven to 350° F. Line a 9×13-inch baking dish with parchment paper. Set aside.
Pour the melted butter and cocoa powder in a large bowl. Using an electric hand-mixer, mix until smooth.
Add the flour and sugar. Beat together, then add eggs and vanilla. Mix until just combined. Don’t over mix. (Batter will be thick.)

Pour batter into the prepared baking dish and spread out evenly. Bake 25 to 28 minutes or until toothpick inserted in center comes out mostly clean. Remove from oven and allow to stand for 15 minutes before frosting. You want the brownies slightly warm when you frost them!
Chocolate Frosting
Beat together all of the frosting ingredients until smooth. Spread over the warm brownies. Let brownies cool completely before cutting and serving. Enjoy!

I would store covered tightly in the fridge. I have never froze them before so I am not sure.

Yes, you can definitely use a hand mixer

This is my favorite brownie recipe. Reminds me of brownies that came from my favorite bakery that is long gone. The first time i made these And ate that first brownie my eyes welled up with teaRs becaUse so many memories came Flooding back. Ive been using this recipe for over 4 years now and always make sure to keep some aside for myself. Hi Terre! The amount of flour you use is typically what can make brownies moist or not. Even though you’re sifting it you could still be using too much flour depending on how you pack your flour in the measuring cup.
For me, I first stir my flour in whatever container it’s being held in to loosen it up. Then I do the scoop and sweep method. I scoop the measuring cup into the flour and then sweep the excess off. This has always worked for me. Hope this helps and happy baking! 🙂 xo
These are amazing! We omitted the frosting,
And sErved them warm with vanilla ICE CREAM. They are soooo good!
YUMMY!! These were delicious!! Thanks for the recipe
We just made these & they are the BOMB!!!! So we are kinda new at his learning how to bake thing. I mean what else is there to do but learn how to bake and watch Tiger King. haha
After just eating 2 of these back to back here is my review. my brownie was more like a cake texture and my icing was runny. Now I was only able to post one pic and some how can’t post another one with you seeing the extra brownie. We followed the recipe to a t.
some feed back would be helpful so i can master this recipe but hey it’s still good the way ours turned out.
(Hey Holly somehow my last name was on that comment. Can you please delete that one?)
Yummy! Reminds me a school days!
This recipe calls for all purpose flour but does not call for salt or baking powder or baking soda. Should any of thes3 ingRedients be added?
No you do not need any leavening agents in this recipe. 🙂 These are more fudge-like brownies.
I made it, IT went great. Thanks!
Delicious!
I don’t have a stand mixer… Will A handheld electric mixer do the trick?
Yes! 🙂
Yum! I cant wait to make these! Does anyone reme kickapoo bars? Thise were my favo hot lunch treat. I have been looking for years but have had any luck.
Thank you for shar this!!
Just made these. Can’t wait till they cool and I can dig in.
Made these this evening and they were delicious! Super easy and just what i was looking for in comfort food during these difficult times of social distancing.
These brownies are the best I have ever tasted!! I will never use another recipe. Put the frosting on when they are still a little warm and it forms a delicious glaze on top. I’m going to go home and make some of these brownies!!
I just made these and they came out dry. Could it be from packing my flour?
Hi Jennifer, the dryness could most likely be from over-flouring. I do the scoop and sweep method when measuring flour. I never pack it.
I’m sorry yours turned out dry though. I hope you try them again! 🙂
JUST CURIOUS, WHAT IS THE REASONING BEHIND USING THE ALUMINUM FOIL INSIDE THE BAKING DISH? THE BROWNIES WERE DELICIOUS!
Easy cleanup! So it’s not required but I love it for the easy cleanup. 🙂
Can I spray The baking dish with Pam Spray or Do I NEED to line the pan with foil?
You can spray it with pam or cooking spray. I like to line mine with foil for just the easy clean up 🙂
