Baked Buffalo Chicken Taquitos
Make the best Baked Buffalo Chicken Taquitos in under 30 minutes. A quick and easy appetizer, lunch, or dinner for busy weeknights!

These Baked Buffalo Chicken Taquitos have quickly become a family favorite! We love using a rotisserie chicken from Costco to whip them up, especially during those hectic weeks when it feels impossible to find time in the kitchen. My kids can’t get enough of them! What’s even better is that these taquitos are baked, not fried, so they’re a healthier alternative to most restaurant versions. Quick, versatile, and full of flavor, they’re perfect as a speedy appetizer, a portable lunch, or an easy weeknight dinner. Need I say more?
BAKED BUFFALO CHICKEN TAQUITOS
The filling of these buffalo taquitos starts with softened cream cheese blended with ranch dressing and buffalo wing sauce, creating a smooth and tangy base with just the right amount of heat. The shredded chicken gets folded in along with sharp cheddar, making the mixture savory and packed with bold buffalo flavor. Once rolled tightly in tortillas, the taquitos are baked (not fried), which gives them a light, crispy exterior while keeping the inside warm, creamy, and satisfying. The process is simple and quick, making them ideal for weeknights or game day spreads. For the dipping sauce, I highly recommend mixing ranch and barbecue sauce, which I break down below. My Creamy Ranch Dressing works well for this if you have ten minutes to spare!

Why You’ll Love This Easy Baked Buffalo Chicken Taquitos Recipe:
- Quick & Simple: Just like your favorite restaurant-style buffalo chicken taquitos, you can make an even tastier version at home in as little as 25 minutes.
- Customizable Heat Levels: Add more or less buffalo sauce to the filling and dipping sauce, depending on your preference.
- Freezer-Friendly Food: These taquitos make for convenient make-ahead meals; bake from frozen or reheat in the oven for best texture.

Ingredients
Buffalo Chicken Taquitos
- 4 ounces cream cheese, softened
- 1/3 cup ranch dressing
- 1/4 cup buffalo wing sauce (I use Frank’s buffalo wing sauce)
- 3 cups cooked shredded chicken (I use a rotisserie chicken)
- 1 ½ cups grated sharp cheddar cheese
- 12 Fajita-size flour tortillas*
- Kosher salt
Note: *You can also use corn tortillas if you’d like, just place the corn tortillas between a couple of damp paper towels and microwave them for about 20 seconds. This will make them soft and more pliable, so they roll easier without tearing.
Dipping Sauce
- 1/2 cup ranch dressing
- 1 tablespoon wing sauce, more or less depending on heat tolerance
Instructions
Preheat oven to 425 degrees. Line a cookie sheet with tin foil and spray with cooking spray. Set aside.
In a medium bowl, combine cream cheese, ranch dressing, and wing sauce. Mix together until smooth. I like to use my hand mixer for this part.
Add shredded chicken and grated cheese and stir until well combined.
Place about two heaping tablespoons of chicken filling down the edge of each tortilla. Roll tightly and place on a prepared cookie sheet. Spray with cooking spray and sprinkle lightly with kosher salt.
Bake for 12 to 15 minutes or until edges start to turn golden brown. Serve with dipping sauce. While the taquitos are baking, prepare the dipping sauce by whisking together the ranch dressing and wing sauce.
Servings
Yields: 12 baked buffalo chicken taquitos. Serves 4 to 6.
Storage and Reheating
Allow buffalo chicken taquitos to cool completely and store in an airtight container in the refrigerator for up to 3-4 days, or freeze baked or unbaked taquitos for up to 2 months. To reheat, warm in the oven at 375°F for 8–10 minutes from the fridge or 12-15 minutes from frozen until crispy and heated through; avoid microwaving to prevent soggy tortillas.
Holly’s Tips for The Best Baked Buffalo Chicken Taquitos:
- For Minimal Cleanup: Bake on foil or parchment for easy cleanup and to keep the bottoms from sticking.
- Use High-Quality Chicken: Feel free to use rotisserie chicken to save time and add extra flavor, or cook your own shredded chicken for a fresher taste.
- Evenly Distribute Filling: Make sure each taquito has an adequate amount of cream cheese, ranch, buffalo sauce, chicken, and cheddar. Try not to overfill.
- Roll Tortillas Tightly: This will help the taquitos hold together while baking. You can also lightly spray with cooking spray for that golden, crispy finish.
- Serve Warm: Serve fresh with ranch and BBQ sauce, or blue cheese dipping sauce to balance the spicy buffalo flavor.
Frequently Asked Questions:
Yes! You can assemble the taquitos up to 24 hours in advance and store them covered in the refrigerator. When ready to bake, simply place them on a prepared baking sheet and bake as directed.
Rotisserie chicken is a great option because it’s flavorful and convenient, but any cooked, shredded chicken (like baked or poached chicken breasts) works well, too.
Yes, corn tortillas work fine. Just warm them between damp paper towels in the microwave for about 20 seconds to make them soft and pliable for rolling.
A buffalo-ranch dipping sauce is a classic choice, but you can also serve them with blue cheese dressing, extra ranch, or even a drizzle of honey for a sweet-heat combo.
To make Baked Buffalo Chicken Taquitos gluten-free, swap the flour tortillas for certified gluten-free corn tortillas or gluten-free tortillas. Be sure to warm the tortillas (especially corn) between damp paper towels, so they’re soft and easy to roll without cracking. The filling is naturally gluten-free, but always double-check labels on the buffalo wing sauce, ranch dressing, and any seasonings. Bake as directed.

Husband & boys are right! Blue Cheese dressing tastes just like throw up! However, this recipe with Ranch Dressing sounds wonderful.
Yummy! What do you usually serve with these?
A salad/ rice would be great with these!
How would you freeze these?
I would make as directed but do not bake. Freeze in a freezer-safe ziplock bag up to 3 months. To reheat I would bake in oven at 400 degrees for around 20 minutes. 🙂
Silly question…let’s say your kids cannot handle spicy… could you leave out the buffalo sauce (I know, defeats the recipe) and either replace it with something less spicy or just leave it out altogether? Would it mess up the composition of the dish?
Jen, not a silly question at all. You can leave out the buffalo sauce and add a little more ranch dressing. Or you could replace the buffalo sauce with barbecue sauce. Either way they’ll still be delicious! 🙂
My FAMILY loves this recipe and i make it at least every other week. I cook them in the air fryer fOr about 9 minutes. They are even good warmed up as left overs!
These are amazing!! Ive been making these for a long time now and my family loves them, even my picky eater
