Good morning, friends! Welcome to Menu Plan Monday #198. We are almost to two hundred meal plans! I can’t even believe it. I posted my first Menu Plan Monday back in 2011. My hopes were it would inspire some of you to start meal planning for your family too. It has saved us SO much money over the years. The cost of eating at home compared to out at a restaurant is like night and day. I’m beyond happy that MPM became a hit and you actually look forward to these menus! To be honest, I think I was one of the first food bloggers to start sharing a weekly menu plan. And now you see them all over blog land. I think it’s awesome!
This week’s dinners are going to be delicious. I’m actually going to be using my oven this week. A lot. haha. I’ve been making so many sandwiches, wraps and salads I think we’re ready for some other things this week. 😉 The SKINNY ENCHILADAS are amazing. Definitely one of my favorites. They’re easy, low in the calorie department, and taste awesome. I’ve been adding chopped green onion to them lately and I really love that added flavor. If you’re a green onion lover then give it a try!
