MENUMONDAY

 Happy St. Patrick’s Day ♥  What green things are you eating today? We’ll be eating one of our favorites, Southwest Chopped Chicken Salad! But we’ll get to that in a minute…

   First, I want to tell you about the lovely weekend we had. My husband and I went to Springdale, Utah for a little getaway. It was SO NICE! Springdale is the small town right outside of Zion National park. It’s a quaint little town that is filled with amazing restaurants and shops. It’s so peaceful and quiet. We stayed at the Cliff Rose Lodge and loved it! The room was so nice. It had a little family room area with a pull-out couch, flat screen TV, fridge and microwave, and had it’s own separate bedroom as well. Perfect size for a small family!

   We went on a nice walk by the river, and then ate at a delicious restaurant called Zion Pizza and Noodle Co. Their pizza is amazing!! I don’t remember the name of the one we ate, but it was so good. It had spinach, mozzarella cheese, pineapple, in a garlic/olive oil sauce. Holy moly. Talk about delish! We had such a good time that we decided were going to take our kids up there this summer and go tubing down the river. I’m so excited!

   Okay, so let’s talk food. I have some great recipes to make this week. A few of them are from my foodie friends!
