This time of year is all about having comforting meals that sticks to your ribs. Sometimes in the winter and fall months I wish I were a bear. This way I could eat until my heart’s content, hibernate, and then reappear in the Spring when I’m ready to face the world again. As much as I wish that to be true, someone has to take care of my kids and husband. 😉 My Menu Plan Monday this week is all about indulging in meals that make you feel full, happy and content.
First up is my Perfect Pot Roast. It is my favorite Sunday dinner. Not only will this fill your home with a wonderful aroma, it’s so simple to make as well. Set the slow cooker on low in the morning, and by evening dinner will be waiting.
Next is my Oven Fried Chicken. This is a great way to enjoy crispy poultry without having to deep fry anything or go through a drive-thru. It is amazing served with mashed potatoes and gravy!
My Pumpkin Cheesecake Cupcakes are two incredible desserts turned into one fantastic treat. These cupcakes are filled with pumpkin cake, cheesecake filling, and topped with a generous layer of cream cheese frosting. This is one cupcake that my Lofthouse crew can’t get enough of.
