I love eggs in the morning. They are the best breakfast food. Eggs keep you energized and full throughout the day. Chicken is not usually something you see on the breakfast menu, but I am here to change that. My Chicken Scramble Bowls are packed with protein and a few breakfast favorites we all love. Top with salsa or ketchup for another level of flavor!

CHICKEN SCRAMBLE BOWLS

Nothing compares to a homemade meal, especially first thing in the morning. There are many convenient options out there where you can drive-thru and pick up a quick breakfast, but once you try this homemade alternative you may never go back. Crispy golden tater tots are at the base of each bowl. Then pieces of chicken and scrambled eggs top the tater tots. Melted cheese covers each bowl rim to rim with parsley as a garnish. This is such a satisfying way to stay to kick off any day of the week!

INGREDIENTS

  • Cooked tater tots
  • Breaded chicken nuggets
  • Scrambled eggs
  • Colby-Jack cheese
  • Fresh parsley

HOW TO MAKE CHICKEN SCRAMBLE BOWLS

This is a great recipe to use your air fryer with. I think it is the fastest and most efficient way to get everything prepared in a timely manner. Look at the temperatures on both the tater tots and chicken nuggets to see if you can cook them together. To be honest, I do, and they turn out just fine.

If you don’t have an air fryer, preheat the oven to the necessary temperature to bake both the tater tots and chicken nuggets together. While the tots and chicken are cooking, scramble the eggs on the stove top. 1 to 2 eggs per person is the perfect portion.

The secret to perfect and fluffy scrambled eggs is medium heat, milk, and constant motion.

Place cooked tater tots in the bottom of a bowl. Top with scrambled eggs, chicken, and cheese. Garnish with parsley, if desired, and enjoy!

WHAT KIND OF CHICKEN SHOULD I USE FOR THE BOWLS?

Here in the Lofthouse I love to use the ‘Just Bare’ brand of chicken nuggets. The quality is great, and I’ve noticed that they don’t turn out as greasy as some other brands do. Now, if all you have in your freezer is dinosaur shaped chicken nuggets, they will work just fine! That might be a better way to get your little ones to eat their breakfast. 😊

TOPPINGS

There is a good chance that you’ll be putting ketchup on the eggs. I love it too! I also enjoy putting salsa on mine. It gives it a little bit of heat, and the chunks of fresh tomato go so well with everything in the bowl. Pair with a warm cup of coffee, or a chilled glass of orange juice, and you have a perfect well-rounded breakfast.

Chicken Scramble Bowls

Ingredients

  • 22 pieces hash brown crowns (I use the Ore-Ida brand. But any hash browns will do)
  • 10 chicken nuggets (I use the 'Just Bare' brand)
  • 2 large eggs
  • 2 Tablespoons milk
  • salt and pepper to taste
  • 1/2 cup Colby-Jack cheese, shredded
  • parsley, for garnish optional

Instructions

  • Cook hash browns and chicken nuggets according to their package instructions. (I cook them both together in the air fryer, so they are crispy and done at the same time.)
  • Meanwhile, heat a small non-stick skillet over medium heat. In a small bowl, whisk the eggs and milk together. Spray skillet with cooking spray then pour eggs in. Stir constantly until eggs are scrambled to your liking.
  • To make the bowls, divide hash browns evenly among two bowls. Then top each with 5 chicken nuggets and one scrambled egg. Top eggs with cheese and a sprinkle of parsley, if desired. Serve warm and enjoy!
