Crock Pot Beef Stew

September is here and I could not be happier! Fall is quickly approaching so that means soup and stew season is almost here. Yay! I’m not sad at all to say goodbye to the crazy heat. Summer was fun but I’m ready for the holidays. 🙂
I can’t think of anything better than eating a warm bowl of Crock Pot Beef Stew on a chilly day. This Crock Pot Beef Stew is filled with hearty pieces of beef and vegetables slow cooked all day in the most delicious gravy.
It’s the perfect Sunday meal to make for your loved ones. I’ve been making this for years and love to serve it with our favorite rolls. It is beyond delicious! Every one in my family adores this meal, including the kiddos. 🙂

Crock Pot Beef Stew
Ingredients
- 2 packages (1 ounce, each) dry onion soup mix
- 1/2 teaspoon paprika
- 2 pounds beef stew meat, or a boneless beef roast, cut in 1-inch pieces
- 5 medium potatoes peeled and diced
- 2 to 3 cups baby carrots
- 1 small yellow onion chopped
- 2 cans (10 ounces, each) cream of celery soup
- 1 cup ketchup *(you can substitute tomato sauce if you don't like ketchup)
Instructions
- In a large plastic bag, combine the dry onion soup mix and paprika. Add in meat and shake the bag to coat meat with the seasonings. (You may have to do that step in two batches, for all the meat to fit)
- Once meat is coated, spread out evenly into a greased 7 quart crock pot. Top meat evenly with the diced potatoes, carrots and onion.
- Mix the cream of celery soup and ketchup in a small bowl. Pour mixture over the meat and vegetables.
- Cover crock pot with lid. Cook on low heat for 7 to 8 hours or until meat is cooked through and vegetables are tender. Stir to combine everything then serve.

Best i’ve ever eaten.
This is so good! It is exactly what I was hungry for on a cold day. I followed the recipe with the changes of USing one small can of tomato sauce, plus one tablespoon Ketchup instead of one cup Ketchup, and I added peas. I like peas! The onion soup gives plenty of salt and seasoning. I highly recommend this easy and delicious crock pot stew.

but bought 3 lb.s of cubed stew meat….like my stews meaty…lol
Do I need to add anything , to compensate for the extra meat?
Maybe another can of celery soup? I bought extra cans 😉

Made it mostly true to recipe except adding a few dashes of worcestershire sauce, 2 stalks of celery, and a small handful of fresh parsley. I also used tomato sauce instead of ketchup. We thought it was very good! considering how easy it is, it will be in our rotation!

I was SKEPTICAL after reading several comments that the ketchup took over, or it was too salty. I had bought the ingredients though so i thought why not… it was fantastic! The flavor is so good, it isn’t too salty, or thick, it is perfect beef stew. I did 1/2 cup of tomato sauce, 1/2 a cup of ketchup, and a little extra potatoes. That is all i changed. So good! Thank you!!
Question my Onion soup mix is 2.0 oz packages, so just to be clear I should just use 1 pk. to make the two 1 oz packages. ?

We made this for dinner tonight and it was so good! I also did a rough calculation of the calories per serving because I was curious, and it came out to 495 calories, in case anyone else is watching their calorie intake and wants to make this. I thought it would be heavy but it’s hearty without being too much! Love it!

Perfection! It was really good, i didnt think there woukd be enough gravy but after 8 hours the mixture coated everything perfectly!

If you want your stew to be thick, then don’t add anything, but you can add beef broth to thin it out a little. I added 2 cups to this recipe, but you could probably add more and it was delicious!

I made this exactly as written, using tomato sauce. I was skeptical that no liquid is used but stayed true to the recipe except for stirring half way thru cook time. This is the absolute bomb! I am pretty picky too but had no regrets! Great recipe!!!!
