What makes these steak bites taste so good is the garlic and lemon in the marinade. It tenderizes the steak bites to perfection and gives them that flavor that truly wows!To ensure the steak gets that bold flavoring, make sure it marinates for a minimum of 2 hours. But the longer you let the steak sit in the marinade, the richer the flavors and the juicier the steak!
About the quick cooking time, it really is true! They take hardly any time to cook, so make sure you keep an eye on them so they don’t get overdone. For those of you, like myself, who like their steaks medium, cook the steak bites for about 4 minutes and they’ll come out so tender they practically melt in your mouth.
Of course, if you like your steak more well done side then just cook a little longer to fit your preference!
INGREDIENTS FOR LEMON GARLIC STEAK BITES
These steak bites are made with a few spices and some other simple ingredients. This recipe is all about simplicity and ease!
- Fresh parsley: for extra flavor; optional, but highly recommended.
- Olive oil: to help cook the meat faster, create the perfect outer texture, and to ensure the steak doesn’t stick to the pan.
- Garlic cloves: what gives that subtle, yet heavenly flavor.
- Oregano: for extra flavor; optional, but would advise against leaving it out.
- Lemon juice: preferably freshly squeezed lemon juice, but bottled works too if that’s all you have.
- Salt & pepper: what savory recipe doesn’t contain a little salt and pepper? 😉
- Flat iron steak: you can’t make steak without the steak, right? Flat iron steak is my favorite, but any steak cut should work.
HOW TO COOK LEMON GARLIC STEAK BITES
Place steak bites in a large non-stick skillet or cast iron skillet over medium-high heat. Since the steak is cut into small, 1-inch cubes, it only needs to cook for 4 to 5 minutes for a medium doneness. But if you like a different level of doneness, be sure to cook longer or shorter.
- Blue: cook for about 1 to 1 ½ minutes for a dark, almost purple, steak that will feel spongy with no resistance.
- Rare: cook for about 1 ½ to 2 minutes for a dark red, soft and spongy steak with little resistance.
- Medium-rare: cook for about 2 to 3 minutes for a pink, soft and spongy steak that is slightly springy.
- Medium: cook for about 4 to 5 minutes for a pale pink, firm and springy steak.
- Well-done: cook for about 5 to 5 ½ minutes for only a trace of pink, spongy and slightly springy steak.
One thing to keep in mind is that Flat-iron steak can become pretty tough if cooked too long.
CAN YOU USE DIFFERENT CUTS OF STEAK?
You definitely can! Just be aware that different cuts of steak cook a little differently so you’ll need to slightly adjust the cook times. Here’s some other steak cut ideas:
- Sirloin: a prime steak best when served medium-rare; very flavorful.
- Flat-iron: best cooked medium to prevent toughness; affordable and intensely flavorful.
- Filet mignon: tender steak that is best served rare; most expensive steak.
- Rib-eye: one of the most prized types of beef, very flavorful, juicy and soft.
- Skirt: best cooked rare or medium-rare at most; very tough and muscle-heavy.
- Bavette and flank: cheap steak best when served no more than medium.
HOW LONG SHOULD YOU MARINATE THE STEAK BITES?
In the marinating world, the longer the steak soaks, the better! So the more intensely flavored you’d like your steak, the longer it should marinate. But I’d recommend letting the steak marinate for a minimum of 2 hours. That way you can still ensure a flavor-filled steak.
CAN LEMON GARLIC STEAK BITES BE SAVED FOR LEFTOVERS?
They sure can! Just make sure to allow the leftover bites to first cool completely, then transfer them into an airtight container and leave them in the fridge until the next time you need them. The steak bites should not be kept beyond 3 days.
HOW DO YOU REHEAT LEMON GARLIC STEAK BITES?
- Skillet: this is the preferred method for reheating steak. Simply place steak in the skillet on medium-low heat, add a splash of beef broth or water, and mix every once in a while until the steak is warm.
- Microwave: place steak bites on a microwave safe plate and cook in 30 second intervals to ensure you don’t overcook and dry out the meat.

Lemon Garlic Steak Bites
- 1/4 cup chopped fresh parsley
- 1/4 cup olive oil
- 2 garlic cloves minced
- 1 teaspoon dried oregano
- 4 Tablespoons freshly squeezed lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 ½ pounds flat iron steak
- In a large bowl add the parsley, olive oil, garlic, oregano, lemon juice, salt and pepper. Whisk well to combine.
- Cut steak into 1 inch cubes. Place cubed steak in the marinade stirring to coat all the steak pieces. Cover bowl with lid and place bowl in refrigerator. Let marinate at least 2 hours or over night.
- Heat a large non-stick skillet, or cast iron skillet (that’s my favorite to use), over medium-high heat. When pan is hot add the steak pieces to skillet, discarding the remaining marinade.
- I like to cook mine for 4 to 5 minutes for a medium doneness. Cook longer if you like your steak well done.
- Serve immediately and enjoy!
