My husband is definitely a meat and potatoes kind of guy, so you can imagine how happy he was when I whipped up this casserole for dinner last week. My entire family ate it in no time and loved it just as much as me. Yep, even the kiddos. 🙂

Ingredients
- 1 ½ pounds boneless skinless chicken breasts cut in 1 inch pieces
- 5 medium Russet potatoes, peeled cut in 1 inch pieces
- 3 Tablespoons olive oil
- 1/2 Tablespoon paprika
- 1 Tablespoon garlic powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 cups shredded cheddar cheese
- 1/2 cup cooked, chopped bacon
- 2 green onions sliced thin
Instructions
- Preheat oven to 400° F. Grease a 9×13-inch baking dish with non-stick spray.
- In a large mixing bowl, whisk together the olive oil, paprika, garlic powder, salt and pepper. Add the chicken and potatoes. Stir to coat the chicken and potatoes.
- Pour the coated chicken and potatoes in the prepared baking dish, spreading out evenly.Bake, uncovered, for 45 to 55 minutes, or until internal temperature of chicken is 165 degrees F.
- Remove from oven, and sprinkle evenly with the cheddar cheese, chopped bacon, and onion.Bake another 5 minutes, or until cheese is melted. Let stand 5 minutes before serving. Enjoy with sour cream, if desired.

It was and is super tasty.
I cooked this at 350 degrees and after 40 minutes I stirred the casserole and cooked another 35 minutes before adding the cheese. I believe this helped the pieces of chicken to not dry out in places and seem overcooked. Also, I did not have bacon or green onions on hand so I used a couple tablespoons of Bacos and a couple tablespoons of dried chives to go with the cheese and it turned out great. Thanks for this recipe.
I made this in a way that doesn’t overcook the chicken. Small pieces of chicken will over cook in 50-60 minutes. Here’s how i did it:
I prepared the potatoes by dicing them and tossing in olive oil.
Then, I prepared the chicken by also dicing it and tossing in oil and I set aside the chicken.
The potatoes were put into the casserole dish and baked, uncovered, for 45 minutes. They we almost done. I then combined the chicken with the potatoes and returned the dish to the oven for 10 minutes. That’s all the chicken takes to fully cook. I turned off the oven and removed the dish. I added the cheese, bacon, and green onions, and as an added twist, added diced green chilis. I then returned the dish to the warm oven for 5 minutes. That’s it! No overcooked chicken and it is a wonderful recipe as a starting point. Happy cooking!
I followed your direction and it worked great. I only cooked my potatoes for 30 minutes while I was prepping everything else. Small pieces of chicken only take 10-15mins to cook and I didn’t want to ruin it for our guests by potentially overcooking the chicken.
Great tip on pre-cooking the potatoes and then adding the chicken later. This method was perfect and the chicken was thoroughly cooked and still very juicy and tender.

Chicken goes in raw. I didn’t have green onions so I cut up a regular onion into pieces the same size as everything else. I notice some of the comments said the chicken got too dry, but mine was fine. I thought it was great.
Just wondering if you peel the potatoes or just scrub the potatoes and leave the skin on?
You could do either/or. I peeled my potatoes but I think it would be fine to leave the peels on, too.

I thought it did too, but all the spices were the perfect amount. The only thing I changed was I baked at 395 degrees for 45 minutes (plus 5 more after putting on the cheese, bacon, and onions) and it turned out fantastic. I definitely will be making this again!
Forgot to add that I also stirred the chicken and potatoes halfway through baking.
I really think this looks so good but just worried about all that oil. Do you really need that much oil? Can you use less or will it risk burning?
With using 1/4 cup oil, I was worried it would be oily too, but it turned out just fine! Maybe try using 3 Tablespoons of oil and I’m sure it’ll be great 🙂

I made this tonight and it’s good, but needs something. I added sweet chili sauce and that zipped it up just right. I leave the skin on the potatoes also.
Add a packet of ranch to the other seasonings, thats how I make it. Yum! My kids favorite

Tasty, but I would add the chicken farther into the baking next time. It took much longer for the potatoes to cook. The chicken was over-cooked by the 4o minute mark, but the potatoes weren’t ready.
Elaine, It’s important that you cut the potatoes as small as the chicken. If they’re bigger than they would need longer to cook. I’ve made this a few times now (because we love it so much!) and both the chicken and potatoes cook at the same time just fine for me. 🙂
I am going to try this with some leftover chicken we have tonight. I think adding when the potatos are nearly cooked should do the trick.

I started cooking the chicken in a skillet until i realized it was for raw chicken. So i took it off the stove (still mostly raw) cut it up and threw it all in the oven. Is that okay to do? Lol. I’ve never stopped cooking somthing and put it in the oven. Thanks!

This was a huge it with my family! As others have mentioned, I waited to put the chicken in until the potatoes had baked for 30 minutes. I did not change the temperature – kept it at 400.
Just made this last night. threw it altogether just the way its written and put in the oven. I sat down and started reading comments about adding chicken later so it don’t dry out (I was worrying since I did as listed). I had no reason to worry, this came out delicious with no dry chicken. My husband and 2 boys (ages 12 & 13) and I agree this is a keeper.
This turned out great. I had no issues with anything being overcooked or undercooked. I just made sure the potatoes were cut small. I added half a can of cream of mushroom soup just because I wanted some creaminess, but I am sure it is just as tasty without that addition. It was a very comforting, yummy, all-in-one meal.
Just made this for dinner! Was worried about overcooked chicken so I did as another cook did and cooked my potatoes for about 30 min tossed in olive oil and some Italian dressing powder with a little extra garlic powder, paprika, and pepper. I made sure they were done and then I added my chicken seasoned the same as the potatoes. My chicken was cut in small pieces. I baked this an additional 10 minutes before I mixed in the bacon, chives, and cheese and then I turned off the oven and let it sit in there for another 5 minutes. The chicken cooked through and was perfect and juicy. Great easy weeknight recipe. Thanks for sharing it!

We love this recipe, but then again, we seem to never make it as well as we did the first few times. I’m not sure how we managed to mess it up. Its a casserole, not rocket-science
Here are the adjustments we’ve made:
*Make shredded chicken ahead of time
*Mix potatoes in Seasoned oil, but reserve some to mix chicken in
*Bake potatoes until done
*Stir in Seasoned chicken, Bacon, Cheese, & onions and Bake for 5 more min
This meal is very heavy, so we pair with a light side salad.
Everyone of my 8 kids liked this dinner.

Can I use whole chicken breasts & how long should I bake it?
This would be an extra step but would cut down on the time to cook the potatoes. par-boil your potatoes first for approx. 5 minutes (don’t overcook them!), drain, pour into a bowl, add seasonings, add your oil, etc., cook.with chicken.

Its not very often everyone likes the same dish, but everyone loveD this one. I didnt have green onions so i just used regular ones. I didnt have an issue with dried out chicken either. We will make this dish again for sure!
