My kids love these Apple Cookie Snacks! Slices of red delicious apples with a shmear of peanut butter, topped with a few crushed walnuts, shredded coconut and chocolate chips.
Over the last month I have had a bunch of emails asking what I eat for breakfast and snacks when I’m trying to be healthy. First, I love getting emails from you all! 🙂 Second, I’m always happy to answer your questions, so keep em’ coming!
For breakfast I eat greek yogurt and oatmeal, pretty much every morning during the week. (On weekends, I like to splurge and make pancakes or waffles for my fam.) The greek yogurt I love is Yoplait’s Greek Yogurt Whips. They’re only 100 calories and totally delish. I really like the blueberry and strawberry flavors. I eat my yogurt with a bowl of plain old oatmeal. I’ve been eating this breakfast for almost 11 years and it never gets old to me.
As for snacks, these Apple Cookie Snacks are one of my favorites. Slices of red delicious apples with a shmear ( I love that word “shmear” ha!) of peanut butter, topped with a few crushed walnuts, shredded coconut and chocolate chips. They’re SO good!
My kids totally love these too. When they come home from school we each eat a couple slices, and then we’re usually satisfied until dinner. 🙂

Apple Cookie Snacks
Ingredients
- 2 medium red delicious apples
- 1/2 cup peanut butter
- 1/4 cup chopped walnuts
- 1/4 cup shredded sweetened coconut
- 1/2 cup chocolate chips
Instructions
- Wash apples with water. Pat dry with a towel. Slice each apple into thin slices. Spread peanut butter evenly over apple slices. Top with a sprinkling each of the chopped walnuts, coconut and chocolate chips.Serve immediatley and enjoy!
Brilliant! I eat an apple/peanut butter snack before bedtime several times a week. I love how you’ve dressed these up with coconut, nuts and chips. MMMM
P.S. – I am crazy wild about oatmeal and yogurt too – we certainly are sisters of the taste buds. =)
How clever, these would make great snacks! And can totally switch up the toppings for some variety.
Love your breakfast idea. Do you put milk or any sweetener in your oatmeal? Do you also have a “standard” lunch that you eat during the week?
Tammy, no I actually scoop up some yogurt then dip it in my oatmeal. So the yogurt makes the oatmeal taste sweet! 🙂 Sounds weird but I love it!
Oh, and lunch is always different. Depending on recipes I’m making/ photographing for the blog (because natural light is good at that time) etc. But I always do love a turkey sandwich on wheat when I’m trying to watch calories and such 🙂
I love these apple cookie snacks! There are no peanut allergies at my school this year so this would be a great snack to make with my class. They love to cook! 🙂
