CHEESEBURGER GNOCCHI

This dish starts out with tender pillows of gnocchi. If you aren’t familiar with it then let me explain. Gnocchi is a potato-based flour pasta that is filling and delicious.

Begin by toasting the gnocchi on each side to make sure they’re properly cooked. Afterwards, ground beef and an array of seasonings and spices are added to make it this dish so flavorful. At the end the cheese is mixed into the finished product, and then sprinkled on top until broiled and finished. Serve and enjoy this unique take on a cheeseburger.

INGREDIENTS

  • 1 tablespoon salted butter
  • 1 package (16 ounces) potato gnocchi
  • ½ pound lean ground beef
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 can (10 ounces) Rotel Diced Tomatoes and Green Chiles
  • 1 cup beef broth
  • 1/4 cup heavy cream
  • 1 cup shredded mild cheddar cheese
  • 3 Tablespoons sliced green onion

INSTRUCTIONS

Melt the butter in a large cast iron skillet (or any oven-safe skillet) over medium-high heat. Add gnocchi to the skillet. Cook on one side for 2 minutes until browned and toasted. Toss the gnocchi and continue cooking for another 2 minutes until both sides are toasted. Place the cooked gnocchi on a large plate. Cover then set aside.

Place the skillet back on the burner and turn the heat to medium-high. Add the beef and season with salt, pepper, cumin, and paprika. Add the onion and garlic to the skillet. Cook, stirring occasionally, until beef is all browned. Drain any fat.

Add the Rotel, broth, and gnocchi back into the skillet. Gently stir to combine. Bring to a boil, then reduce heat to low. Cover with a lid and let simmer for a fewminutes, or until the gnocchi is tender and most of the liquid is absorbed.

Remove skillet from heat. Add the heavy cream and 1/2 cup cheese and stir to combine. Sprinkle the top evenly with the remaining cheese. Place the skillet under the broiler until the cheese is melted and bubbly. *Watch closely so it doesn’t burn!* Top with green onions and serve warm. Enjoy!

SERVINGS

This recipe makes 4 servings. Now, that being said, gnocchi can tend to be very filling. Depending on how hungry your little ones are you may be able to stretch one more serving out of this dish.

COOKING TIME

This amazing recipe can be ready in just about 30 minutes. This is another quick and easy meal to add to your rotation!

WHAT TO SERVE WITH CHEESEBURGER GNOCCHI

Since this is a very filling dinner, I like to keep things light on the side. Serve with a small green salad or a favorite veggie!

FRESH VS. PREMADE GNOCCHI

For this recipe I am all about ease. I like to use shelf stable gnocchi. I buy the DeLallo brand and love it. If you come from an Italian family with a great gnocchi recipe, then I say make those first. Take into consideration the cook time if you decide to go the fresh pasta route.

MEAT ALTERNATIVES

If you are looking to make this dish slightly healthier than I recommend substituting the ground beef for ground turkey or ground chicken. This will cut down some of the calories and fat. The cook time on the meat may also slightly alter depending on which one you choose to cook with.

CHEESE VARIATIONS

Mild cheddar is the classic choice to go into the dish, but the options are endless. Try substituting pepper jack, white cheddar, or any other of your favorite cheese!
