Cheesecake Pudding Cookies with Sprinkles

When I learned to make my first batch of cookies as a kid, I fell in love with baking and cooking. It has been my true love language ever since. I will always love whipping up a batch of cookies and sharing them with my people. My Funfetti Cheesecake Pudding Cookies are fun to eat, fun to make, and a fun reason to have a party. Whether it’s a birthday, graduation, or just celebrating the fact we made it to the weekend, it’s always time to make a batch of these cookies!

FUNFETTI CHEESECAKE PUDDING COOKIES

Not only are these cookies amazing, but they are fun to look at. Perfect for any celebration! What makes these cookies really stand out are the sprinkles and the cheesecake pudding. The pudding makes sure that each cookie is soft, chewy, and gone in two bites. And the rainbow sprinkles throughout makes them extra fun!

INGREDIENTS

  • 3/4 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 cup salted butter, softened
  • 1 box (3.4 ounces) instant cheesecake pudding mix
  • 2 large eggs
  • 1 teaspoon cake batter extract
  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 bag (11 ounces) white chocolate chips
  • 1/3 cup rainbow sprinkles

INSTRUCTIONS

Preheat oven to 375°F. Line 2 large cookie sheets with parchment paper or silpat liners.

Place both sugars and butter into the bowl of a stand mixer or a large mixing bowl. Beat together until creamy and combined.

Add cheesecake pudding mix, eggs and cake batter extract. Beat until just combined.

In a separate medium bowl- combine flour, baking soda and salt. Whisk together. Slowly blend this mixture into the wet ingredients just until combined. Don’t over mix. Stir in the white chocolate chips and rainbow sprinkles.

Drop cookie dough by rounded tablespoons onto prepared cookie sheets. Bake only 10 minutes. Remove from oven and let cool on cookie sheets. Serve and enjoy!
