What’s better than bacon? Ranch dressing of course! I could not wait to make these easy wraps for lunch. I grilled the chicken and cooked the bacon the night before so they were ready to go for lunch during the week. I can always find ranch dressing in my refrigerator so I am always looking for ways to use it up.
When I think of lettuce wraps I typically think of a low carb option so I can ditch the bread for a sandwich. It’s always a great idea to keep romaine lettuce or whole lettuce instead of the pre-chopped stuff. These wraps take just minutes to assemble and they are so good! Crunchy, meaty, savory and loaded with lots of flavor. It’s also a great way to get your greens! 😉
- 8 chicken tenders
- 2 tsp. olive oil
- ½ tsp. salt
- ½ tsp. pepper
- ½ tsp. garlic powder
- ½ tsp. Italian seasoning
- Squeeze of ½ lemon; juice
- 8 slices cooked bacon, crumbled
- Romaine lettuce leaves
- Ranch dressing
- Heat a medium grill pan on medium heat and add oil. Season the chicken tenders with salt, pepper, garlic powder, and Italian seasoning evenly on both sides. Cook for about 5 minutes on each side or until the chicken isn't pink. Drizzle the lemon juice on top of the chicken before taking them out of the pan.
- Cut the chicken tenders into pieces and add a few to each lettuce wrap and top with crumbled bacon. Here is the best part- drizzle Ranch dressing on each lettuce wrap. Enjoy!
