The foundation of any great dish lies in its ingredients and my Egg White Bites are no exception. Liquid egg whites, cottage cheese, cooked bacon, green onion and cheddar cheese are mixed together then divided between 12 baking cups. Place in the oven and bake to perfection for 25 minutes. So easy and so good!

INGREDIENTS

  • 2 1/2 cups liquid egg whites
  • 2/3 cup cottage cheese
  • 1/2 cup chopped, cooked bacon 
  • 1/4 cup chopped green onion 
  • 1/2 cup shredded cheddar cheese 
  • salt and pepper, to taste

INSTRUCTIONS

Preheat the oven to 350 degrees F. Spray a 12-cup muffin tin with non-stick spray. Set aside. 

Pour the egg whites into a large mixing bowl. Whisk in the cottage cheese, bacon, and green onion. Divide the egg mixture evenly among the 12 prepared muffin cups.

Sprinkle the top of each egg cup with salt and pepper. Sprinkle the cheese evenly over all the tops. 

Bake uncovered for 25 minutes or until the eggs are set. Carefully remove the pan from the oven. Let the egg bites rest and cool slightly. Serve warm and enjoy!

  • 1/2 cup cooked, chopped bacon
  • 1/4 cup chopped green onion 
  • 1/2 cup shredded Colby-Jack cheese 
  • salt and pepper, to taste
