Easy Chicken Pillows

I discovered this fabulous recipe from one of my friends many years ago. It has been a popular dinnertime favorite here in Utah and goes by a few different names. In our house, we like to call them Chicken Pillows. They are such a fun and delicious way to enjoy a homemade chicken meal. They are simple to make as well. This is a great recipe to show your teens, so that one day when they go off to college, they have this one in their back pocket to impress their friends with!

CHICKEN PILLOWS

At the heart of each pillow rests a savory mixture of chicken, cream cheese, and seasonings. This wonderful mixture is wrapped in crescent dough then rolled in butter and breadcrumbs. All the pillows are perfectly placed on a baking sheet and baked to golden perfection. Top each pillow with chicken gravy for a meal that everyone will go wild for!

Easy Chicken Pillows

INGREDIENTS

PILLOWS

  • 10 ounces cooked, shredded chicken (about 2 cups)
  • 4 ounces cream cheese, softened
  • 1 Tablespoon salted butter, softened
  • 1/2 Tablespoon dried chives
  • 1/2 Tablespoon dried minced onion
  • salt and pepper, to taste
  • 1 can (8 ounces) Pillsbury crescent roll dough
  • 1/4 cup salted butter, melted
  • 1/2 cup Italian breadcrumbs

GRAVY

  • 1 can (10 ounces) cream of chicken soup
  • 1 packet (1 ounce) chicken gravy mix
  • 3/4 cup water

INSTRUCTIONS

Preheat the oven to 350 degrees F. Lightly grease a baking sheet with non-stick spray and set aside.

Mix the softened cream cheese and 1 tablespoon butter together. Add the shredded chicken, chives, onion, and season with salt and pepper. Unroll crescent dough and press two triangles together to create one rectangle. Make sure to press the perforations together well so the filling doesn’t seep out. You will have 4 rectangles total.

Divide the chicken mixture evenly among the 4 crescent rectangles. Place chicken in the center of each rectangle. Fold each corner over the center of the filling. Press together to cover filling entirely. Shape into a ball. Repeat with all rectangles.

Dip each of them into the melted butter, then coat in breadcrumbs. Shake off excess. Place each coated chicken pillow onto the greased cookie sheet. Bake for 22 to 25 minutes or until golden brown.

Meanwhile, make the chicken gravy. In a small saucepan, mix the cream of chicken soup, gravy packet and water together. Bring to a boil, and then reduce heat to low. Allow the gravy to simmer until chicken pillows are finished baking. Pour gravy over each chicken pillow and serve. Enjoy!

SERVINGS

This recipe serves 4. Each pillow is one large serving, but you can cut one in half to make two smaller servings. This recipe also easily doubles if needing to serve more.

GRAVY OPTIONS

I have found the chicken gravy on top goes well with the filling, and my kids are sure to eat it. If you prefer brown gravy, I say give it a try! A mushroom gravy would add a savory finish to the dish for moms and dads who might like something a little richer!

I didn’t have cream cheese so I used some Laughing Cow creamy swiss and made some gravy out of reduced chicken broth and flour. Hmm, maybe not quite as delicious as yours but still palatable with a side of rice and peas!
