Menu Plan Monday is a list of family-friendly meals that are great for busy weeknights.

It’s the week of St. Patrick’s Day, and I am here to bring everyone a little bit of the luck of the Irish! We all need a little luck in our lives, I am feeling lucky that I get to share all these delicious recipes with you all. This week’s menu plan Monday is inspired by some of my favorite Irish fare. Traditional recipes as well as some new ones will fill your home with delicious meals.

First this week we have the hearty and flavorful Shepherd’s Pie, or Cottage Pie. I love this meal for so many reasons. First of which being that everything is covered with a thick layer one of my favorite foods, mashed potatoes. You and your family will be scooping out every bite of this classic Irish dinner. My Slow Cooker Creamy Ranch Pork Chops will be great for a night that you need to start dinner early and let it simmer all day long.

For dessert this week I’ve got my Shamrock Shake Copycat recipe. This creamy dessert is filled with refreshing mint flavor and is as green as a freshly picked shamrock. It tastes just as good as it looks, and your kids will think they’re the lucky ones when you serve them this dreamy dessert. No need to chase down a rainbow for a pot of gold because I’ve delivered a gold list of recipes for you to enjoy this week.
