Well here it is, Menu Plan Monday #234! How was everyone’s weekend? Ours was busy and so much fun. We watched our daughter Emma perform at the Arts Festival here in St. George. She performed two dances with her dance team and they did such an amazing job. I was that mom in the audience screaming and cheering her on. I’m sure she loved that. Not! haha.
We also went to the car show in Hurricane, like we do every year, to look at the vintage cars and eat amazing food. Kale and I shared the ‘Frychos’ at one of their food trucks. It was crispy french fries topped with beef tips, bbq sauce, ranch dressing and cheese. Holy cow it was so delicious. I think I gained 5 pounds just eating that. 😉
Yesterday we had a quiet and peaceful Easter at home. The kids had an egg hunt (all the eggs were filled with money, so they were pretty stoked about that) I also made a big dinner, and we ended the day with my favorite carrot cake. It was the perfect day. ♥
