Today’s recipe are these Oven Baked Soft Tacos and they are wonderful! My family and I are taco-loving fools. We eat them way too much but I don’t care. This oven-baked version is one of my faves I have been making for awhile.

The reason I like to make our soft tacos this way is because I don’t have to warm a million tortillas in the microwave before I fill them. I fold all the tortillas in a taco shape and load them up in a 9×13-inch baking pan. Then I fill them with all the delicious meat (you could always add beans too). Pop it in the oven for about 5 minutes to get the shells warm and just ever so slightly crisp.

I don’t have to tell you what the next best thing about a taco is that you can use whatever toppings your heart desires. We love chopped tomatoes, green leaf lettuce and lots of Queso cheese! I buy the jars from Mission brand and heat it up in the microwave right after the tacos are out of the oven. Then drizzle it all over the tops. Talk about yum!

Oven Baked Soft Tacos

Ingredients

  • 1 ½ pounds lean ground beef
  • 1/2 small yellow onion chopped
  • 1/2 teaspoon garlic powder
  • 1 packet (1 ounce) taco seasoning
  • 1/4 cup water
  • 8 to 10 soft flour tortillas I use fajita size

Taco Toppings:

  • lettuce
  • tomatoes
  • onion
  • sour cream
  • guacamole
  • shredded cheese
  • Queso
  • salsa

Instructions

  • Preheat oven to 375 degrees F.
  • Place ground beef in a large non-stick skillet. Add chopped onion, garlic powder, taco seasoning, and water to beef. Stir, cook and crumble beef over medium-high heat. Bring mixture to a boil, then reduce heat to low. Simmer for about 10 minutes.
  • Meanwhile, fold flour tortillas in a taco shape and place side by side in a 9×13 inch baking pan. (I fit 6 down the center and 2 on each side) Divide the taco meat evenly among the tortillas in pan.
  • Place pan in the preheated oven. Bake 5 to 8 minutes or until tortillas are heated through.
  • Carefully remove from oven and fill tacos with all your favorite taco toppings. Enjoy!

Recipe yields 10 tacos (5 servings. 2 tacos per serving)

    brilliant! I made these tonight for dinner and can i just say — game changer! I have a family of 5 so heating up enough tortillas for this taco-loving crowd is always a pain plus some overstuff their tacos and it doesn’t leave enough meat for everyone else. this…. was… perfect! Plus if you wanted to make the meat stretch even further — stir in a can of refried beans… cheap way to streth it for seconds too! Served with queso, lettuce and tomato and the taco bell creamy chipotle sauce you can buy in store — it’s SOOOO good! I just sliced the iceberg lettuce and used my life-changing amazon chopper for the tomato and this went together in no time. Saved this to my taco rotation — will definitely be a keeper! Plenty of leftover components for my college kiddo to make some for lunch the next day. Seriously… I could just hug you for this one
