You can use chicken breasts or chicken thighs in this recipe. Using boneless, skinless chicken thighs will only make this recipe all the more flavorful.

You can never go wrong with grilling any sort of chicken. I recommend not dicing the chicken before hand, or they’ll fall right through your grill. Cut them up after they’ve cooked!

Chicken Taco Bites
- 2 teaspoons extra virgin olive oil
- 1.5 pounds boneless skinless chicken breasts cut in 1-inch pieces
- 1 lime
- 2 Tablespoons taco seasoning
- 2 Tablespoons freshly chopped cilantro
- Heat oil in a large skillet, over medium-high heat.Squeeze the lime juice all over the chicken pieces. Toss to coat. Then sprinkle taco seasoning over the chicken; toss again to coat.
- Place chicken into the hot skillet. Stir and cook chicken for about 10 minutes; or until chicken is cooked through.Remove from heat. Sprinkle the chopped cilantro all over the top.
- Serve chicken immediately with rice, in tortillas or just by itself! We also like to serve these on a big green salad. Enjoy!
