For those of you who are staying strong with your new year goal on meal prep, I am here to cheer you on! I prepare meals often for me and my husband, Kale. It’s so convenient to have some delicious homemade meals that you can just grab right out of the fridge and warm up. On this week’s Menu Plan Monday, I am excited to share some solutions for your meal prep needs. Give these a shot this week for you, your spouse, and your kids!
First up, my Taco Salad Meal Prep Bowls are so flavorful and great for lunches and dinners. I’ll eat these when I need a quick lunch, or if I want something a little lighter. I’ll also throw these in my kid’s lunch bags too. I love knowing that they have a filling and healthy meal in between school classes.
My Sweet BBQ Beef Sandwiches can be made ahead of time and packed to eat later. The savory and sweet shredded beef is served on a roll and is so delicious. It will make your coworkers envious. 😉
Sunday is usually my day for baking sweets. I’ll make a large batch of something delectable that can be portioned throughout the week. My Apple Crumble Bars are so fantastic they might not even make it past Sunday evening. A piece on its own is delicious enough but served with a single scoop of vanilla ice cream is perfection.
