During these hot months I notice one thing about the eating habits of the Lofthouse crew. We tend to snack more throughout the day and then have one large meal. Especially on days we are out by the pool, or spending time with friends, snacks are usually the easiest thing to have around. For Menu Plan Monday #498, I want to make sure you have an arsenal of recipes for that one big meal. If you’re anything like the Lofthouse gang, you either need a big meal first thing in the morning to energize the day, or in the evening to refuel.
My Baked Ham and Cheese Omelette is a protein packed breakfast that will give your kids the energy they need for a full day of fun. I serve this with a glass of orange juice for the kids, and a warm cup of coffee for Kale. I enjoy Diet Coke with breakfast. Don’t judge me. 😉
When it’s dinner time, and a large meal is needed, my One Pan Ranch Chicken and Veggies is a go to. It’s a healthy and hearty way to give everyone their vegetables in a flavorful way. A meal like this is great for easy clean up and less dishes.
Summer time means that there really is only one option for dessert: ice cream! And I don’t mean going through a drive-thru to get a chocolate dipped cone. No. I am talking about real, homemade ice cream. Don’t sweat it though because my Fudge Ripple Ice Cream is a breeze to make, and so yummy!
