This week we celebrate Indigenous Peoples’ Day. I hope that you spend the holiday with family and friends enjoying fun activities. If you live in Utah, then you know that it’s also Fall Break. That means most everyone is going to Disneyland. We Utahns love Disneyland, especially this specific week. For Menu Plan Monday I am setting you up with some delicious meals, whether you’re headed to California or not.
First I am sharing one of my all-time favorite recipes. It’s my Copycat P.F. Chang’s Chicken Lettuce Wraps and they are so good! They are crisp, light, and perfect for an easy lunch. You can also meal prep this recipe, so if you need a snack on the road you can have something flavorful, healthy and yummy!
Another easy lunch you can make for the road, or to enjoy in your backyard, is my Chicken Pesto Pasta Salad. This is flavorful and loaded with protein and vegetables. This is a great meal to take in the park and snack on, so you don’t have to pay those high prices all day long.
The best way to finish off the week is with my Chocolate Chip Cookie Pie. This isn’t just a cookie, but an entire pie of warm gooey cookies. This is what I’ll be making if we don’t go visit the greatest place on earth. This dessert, served with a scoop of vanilla ice cream, is the next best thing. 😉
