It’s that beautiful time of year when spring is in the air, but winter still has an evident presence. The sun is shining more to begin the budding process on all the foliage, but when the wind picks up you can feel the cool kiss of frosty air. How do we respond to this kind of weather in the kitchen? Making meals that appease both climates! This week’s Menu Plan Monday is all about seeing both sides of the season. You can start to enjoy your light and bright fare while indulging in the best wintertime meals. 😊
For those bright spring days when the picnic table is beckoning you try making my Mandarin Orange and Spinach Pasta Salad. Tender penne noodles are tossed together with fresh spinach leaves and juicy pieces of Mandarin orange. This is a well-balanced salad that is perfect to add some grilled chicken to.
On those gloomy March days, when the clouds are still above, bake up a pan of my Baked Mac and Cheese. This is comfort food at its finest and will brighten any mood, any day of the week.
Dessert is no exception this week. I am so happy to share with you one of the most incredible treats. My Banana Cream Pie Cheesecake is out of this world! It is rich, creamy, and dreamy. A slice of this will melt all your troubles away.
