If you remember my Crock Pot Cheeseburger Soup then you are going to LOVE this Bacon Cheeseburger Soup recipe! Not only did I add crispy bacon to it, but I also replaced the cheddar cheese with pepper-jack cheese and topped it off with green onion. It didn’t make it spicy, but it made it extra delicious!
The temps have dropped where I live so it has been COLD! We may even see some snow here which is rare. When it’s this cold all I want to do is curl up on my couch with a blanket, and have a warm bowl of bacon cheeseburger soup! This soup is so comforting and filling.

I received quite a bit of questions and comments on my Crock Pot Cheeseburger Soup recipe, so I thought I would include the answers to be helpful in case you might need them.
Can I use frozen hash browns or rice instead of potatoes?
- The answer is YES to both. You can use a one pound bag of frozen diced hash browns. I suggest adding the frozen hash browns when you would add the regular potatoes at the beginning.
- You can use 2 to 3 cups cooked rice to replace the potatoes. I add in cooked rice at the time I add in the cooked ground beef. I have tried this recipe once with the rice and it was delicious!
Am I able to make this on the stovetop?
- Yes, you can definitely make this wonderful Bacon Cheeseburger Soup on the stovetop. Using a large pot, add potatoes, onion, carrots, basil, parsley and chicken broth. Bring to a boil, then simmer together until potatoes are tender. Then you can resume the recipe as written.
How can I make this soup gluten-free?
- This bacon cheeseburger soup recipe can be made gluten-free with a few adjustments. Replace the all-purpose flour with gluten-free flour. You can even use almond milk to replace the cow’s milk as one reader did. She said it was delicious! *Always be sure to read labels on all ingredients when needing to watch gluten in your diet.*
How to make Slow Cooker Bacon Cheeseburger Soup:
This recipe is so easy to make!
- First step is to grease the insert of your slow cooker. (I personally use a 7 quart size slow cooker.) Add the veggies to slow cooker then pour the chicken broth over the top. Cover with lid and let cook at your desired time. This recipe gives you the option of cooking it on low heat for a longer period of time, or on high heat for a shorter amount of time.
- When you have about an hour left of cooking time, cook the ground beef and bacon, then add them in to the soup along with the remaining ingredients. Cover with lid and cook on low heat or the warm setting for another 30 minutes or until everything is heated through and cheese is melted. Serve in individual bowls with chopped green onion. Yum!

Ingredients
- 4 small russet potatoes peeled and diced
- 1 small white or yellow onion chopped
- 1 cup shredded carrots
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- 3 cups chicken broth
- 1 pound lean ground beef
- 8 slices cooked bacon chopped
- 3 Tablespoons butter
- 1/4 cup all-purpose flour
- 2 cups milk I use 2%
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups shredded pepper-jack cheese or cheddar cheese
- Green onion chopped (for garnish)
Instructions
- Place potatoes, onions, carrots, dried basil and parsley in a large crock pot. Pour chicken broth over vegetables. Cover with lid. Cook on low heat 6 to 8 hours OR on high heat 4 to 5 hours or until potatoes are tender.
- About 45 minutes before serving, cook and crumble ground beef in a large skillet over medium-high heat. Drain any grease. Pour cooked ground beef into crock pot. Add in the cooked, chopped bacon as well.
- Carefully wipe out hot skillet with a paper towel then add butter. When butter is melted whisk in flour and cook until golden brown and bubbly (about 1 minute.) Whisk in the milk, salt and pepper. Pour mixture into the crock pot and stir to combine everything.
- Add shredded pepper jack cheese to crock pot. Stir again. Cover with lid and cook another 20 minutes or until cheese is melted.

This looks fantastic, could i use frozen SHREDDED potatoes IN place of regular potatoes? When would I add them?
Yes, you can use frozen shredded potatoes. I would add them when you add the cooked ground beef. Then let them cook for about an hour or so. They don’t take long to cook. 🙂
I use the small diced country style hash browns and add them an hour before its done

I chop my veggies in the food processor. In place of the basil I use thyme & marjoram or sage. I also season my ground beef with a bit of worcestershire sauce. Good stuff!!!

Would this be ok to make ahead? Need to make a soup for my husband and his buddies to take while they go hunting.
Yes I think it would be fine to make ahead of time. After it’s fully cooked I would let it cool down quite a bit, then store in airtight containers. Then they could reheat it in a pan over a fire. 🙂 They may need to add milk to it to thin it out because it does thicken a little when it’s stored.
Looking forward to making this! Is it possible to cook it all and let in hang out in the Crock-Pot for a few hours, fully assembled? I’d like to get it ready by 3 and eat as soon as we get home at 6 🙂
Yes it can hang out in the crock pot for awhile after it’s fully cooked. I would just keep it on the warm setting. 🙂
Can this soup be frozen?
I personally don’t like to freeze soups that have milk in them. It tends to separate when they are frozen and have a grainy texture when reheated. So I have not tried freezing this one because of the milk in it.
I have frozen the left over portion of this soup. I rEheated it on the stove and it was just as tasty!
Could you use the Ore-Ida diced hash brown poTatoes in it instead of 4 small potatoes?
Yes you could use the frozen diced hash browns! About 3 to 4 cups of the diced hash brown potatoes should work.

I made this recipe exactly as directed yesterday, and it was delicious! The only thing i will do different next time is instead of stirring the bacon in, i will add it to the table For people to add as a topping. I spent the most time out of the entire prep frying up thick, crispy bacon, and as soon as it got stirred into the soup it became soggy and chewy. Otherwise though, this recipe is spot on!
This was delicious! We actually douBled the recipe and replaced the hamburger with grouNd deer. We also added small cauliflower florets in place of most of the potatoes. We will definItely make this a regular soup dinner!
Made this today and it was sUper yummy! I used corn starch instead of flour to make it gluten free and added gaRlic and 1 chopped jalapeno. My family loved it! Will try again with rice instead of potato.
Great recipe, I also added hot Italian sausage after tasting. it gave it more flavor similar to zupa Toscano without the kale.

Could i use a cup of Sour cream possibly in place of one of the cups of milk? I only haVe half and half But my mamma uses it for her morning coffees
The sour cream may curdle because of how hot the soup gets.. You can try it but I’m not sure if it will turn out. Sorry.

I made this on the stovetop tonight (my apologies for all caps, I can’t seem to stop them). So so good! I had skim milk and 1/2 C of heavy cream in the fridge and some velveeta in the pantry, so that’s what i used. I will definately make this again. Thank you!

Great recipe for fall camping. i made ahead and put it in gallon ziplock bags. then dumped and reheated over the fire in a big foil/disposable lasagna tray. i love chili for camping but the kids aren’t big fans. This was a great subsitute to warm everyone up and have a tasty, Filling meal.

Needing to make a crock pot soup for work event. Could I make this the night before and put it in the fridge. Then just take to work the next morning and reheat? Would it get too thick?
Yes, you can make this the day before. It will definitely thicken as it sits in the fridge overnight, but you can always thin it out with some milk as you rewarm it for your work event. 🙂

Perfect for the first fall day. I added 1/4 c of the cheese to the flour/milk mixture and let it melt before adding it to the crock pot. Then added the rest.

Sounds Delicious!! making this tomorrow and after reading comments, decided on just a couple minor changes. growing up in the midwest, this would be an instant hit @ family events.
amendments as follows:
1. smashburger patties cast iron on the grill – then chop up prior to adding into soup (love the crispy edges)
2. Use Smoked Cheddar
3. Add Bacon as topper when plating (keep it crisp) wink to Amy #14
4 serve in bread bowl w chopped Dill pickles as topper
