Have you recovered from your food coma? I’m still trying to wake up from mine. Our Thanksgiving feast was so good I just couldn’t stop enjoying it. This week on Menu Plan Monday we are taking a break from all that heavy food and enjoying some things that are just a bit lighter. These are all delicious recipes that are family favorites!
First let’s make this week’s breakfast super simple. Meal prepping your breakfast for the entire week can take a lot of stress off your shoulders, and free up a lot of time. My Scrambled Egg Breakfast Muffins are protein packed and easy to store to enjoy throughout the week. Store them covered in the fridge for a quick breakfast Monday through Friday.
Next, my Ranch Chicken Enchiladas are the perfect way to mix things up before jumping back into the traditional holiday recipes. They are filling and so good!
We must have a little something sweet, and since we’ve had plenty of pumpkin for a few months now I think it’s time to get a little zesty! My Glazed Lemon Brownies are bright and will bring a beaming smile across your kids face. I hope that you enjoy switching things up just a little bit this week before we welcome in the last month of the year.
