Not only does December hold Christmas but also my birthday. So I’m going to celebrate with recipes everyone will love!

First, we’re starting with one delicious dinner: Beef Tips With Mushroom Gravy. This hearty meal features tender sirloin steak tips with baby Bella mushrooms and a savory gravy. A recipe ideal for busy weeknights and holiday dinners. It pairs perfectly with my Crock Pot Creamy Mashed Potatoes and any of my Dinner Roll recipes. This is comfort food on a plate!

Now that Thanksgiving has passed and Christmas is just around the corner, it’s time to focus on the best holiday side dishes! My Garlic Roasted Carrots add warmth and color to any meal. This simple recipe combines baby carrots, olive oil, minced garlic, dried thyme, and a touch of salt and pepper, roasted to perfection and garnished with fresh parsley. The result is an amazing vegetable dish that compliments any holiday feast or cozy weeknight dinner.

Another Menu Plan Monday is here! With Thanksgiving around the corner, this week’s recipes are quick, comforting, and perfect for the upcoming turkey holiday. From hearty pasta and lasagna dishes to classic chicken dinners, this menu has something for every occasion.

Say hello to your new comfort food favorite: Chicken Pillows with Creamy Parmesan Sauce! This dish features tender shredded chicken blended with cream cheese, chives, and seasonings, wrapped in flaky crescent dough and baked until golden brown.

I love to make this next dish for holidays, parties, and potlucks, because it never gets old! My Twice-Baked Potato Casserole is filled with creamy potatoes, crispy bacon, and cheese, baked until golden and bubbly.  It’s a make-ahead favorite (perfect for Thanksgiving coming up next week!) that can be assembled the night before and baked when you’re ready to serve, making it both convenient and delicious. 

With Thanksgiving coming up, I just had to share my Caramel Cream Pie with you! This fall dessert is light in body and large in caramel flavor. The base for this pie is sugar cookie dough, which adds a delightful sweetness and texture. And the thick caramel sauce and toffee bits at the base ensure that each bite is filled with goodness. Welcome to the first Menu Plan Monday of November! The holidays always seem to sneak up on us, and I know this time of year is hectic for most families. That’s where my weekly meal plan comes in! Thanksgiving has come and gone, so it’s time to relax just a bit. Dinner still needs to hit the table, but I’m sure we’re all looking for something different than turkey and gravy. This week for Menu Plan Monday I am here to switch things up before we head into another holiday themed menu.

I’m making my Red and White Pasta this week. It is the Lofthouse kids’ all-time favorite meal. They jump for joy every time they know I am making this for dinner. I practically do the same thing, too, because it’s one of the simplest recipes to make.

For a fun and easy lunch, make sure to try my Doritos Taco Salad. It hits on every level, including crunch, crisp, and flavor!

It’s one of my favorite weeks of the year- Thanksgiving week! Each year, I plan our menu ahead of time. I start buying ingredients early, so I am ready to go. For Menu Plan Monday, I am sharing some of my must-make recipes. Each one of these dishes is are staple at our Thanksgiving feasts!

First off, what Thanksgiving dinner would be complete without turkey and gravy? That’s why my Crock Pot Turkey and Gravy is essential. Everything cooks on low heat in the background while I attend to the other side dishes and desserts. This recipe always makes life easier, and it is yummy!

Crock Pot Creamy Mashed Potatoes is another staple recipe that is so delicious. Crock pots are such a great kitchen tool, and shouldn’t be wasted on this important holiday!

For dessert, try my Pumpkin Rolls! They are pretty amazing, and are a family tradition I have carried on for a long time. Pumpkin rolls are such an impressive dessert in the look and taste.

This time of year is all about having comforting meals that sticks to your ribs. Sometimes in the winter and fall months I wish I were a bear. This way I could eat until my heart’s content, hibernate, and then reappear in the Spring when I’m ready to face the world again. As much as I wish that to be true, someone has to take care of my kids and husband. My Menu Plan Monday this week is all about indulging in meals that make you feel full, happy and content.

First up is my Perfect Pot Roast. It is my favorite Sunday dinner. Not only will this fill your home with a wonderful aroma, but it’s so simple to make as well. Set the slow cooker on low in the morning, and by evening, dinner will be waiting.

Next is my Oven-Fried Chicken. This is a great way to enjoy crispy poultry without having to deep fry anything or go through a drive-thru. It is amazing served with mashed potatoes and gravy!

My Pumpkin Cheesecake Cupcakes are two incredible desserts turned into one fantastic treat. These cupcakes are filled with pumpkin cake, cheesecake filling, and topped with a generous layer of cream cheese frosting. This is one cupcake that my Lofthouse crew can’t get enough of.

For Menu Plan Monday, I am making sure the week is loaded with all kinds of comfort food. This time of the year is all about treating yourself, and your meals should do exactly that. Not only are these recipes amazing, they’re easy to make too!

My Chicken Mashed Potato Bowls are one of my favorites. Breaded chicken, corn, cheese, and gravy are piled high over mashed potatoes. They have everything that you’d want from a hearty homemade meal packed into one bowl. My kids love these! 

Next up is my BLT Pasta Salad. This is a recipe that replicates one of the most iconic sandwiches. The only thing missing is the bread, and use pasta instead! This makes for a well-rounded lunch or dinner.

For a slice of something sweet this week, try my Raspberry Cream Cake. It will blow your mind. This dessert includes a fluffy white cake with a layer of cheesecake and raspberry pie filling. It is so good! A slice of this is like biting into a piece of heaven!

Have you recovered from your food coma? I’m still trying to wake up from mine. Our Thanksgiving feast was so good I just couldn’t stop enjoying it. This week on Menu Plan Monday we are taking a break from all that heavy food and enjoying some things that are just a bit lighter. These are all delicious recipes that are family favorites!

First, let’s make this week’s breakfast super simple. Meal prepping your breakfast for the entire week can take a lot of stress off your shoulders and free up a lot of time. My Scrambled Egg Breakfast Muffins are protein-packed and easy to store to enjoy throughout the week. Store them covered in the fridge for a quick breakfast Monday through Friday.

Next, my Ranch Chicken Enchiladas are the perfect way to mix things up before jumping back into the traditional holiday recipes. They are filling and so good!

We must have a little something sweet, and since we’ve had plenty of pumpkin for a few months now, I think it’s time to get a little zesty! My Glazed Lemon Brownies are bright and will bring a beaming smile to your kids’ faces. This is the food week we have been anticipating all year. Thanksgiving is here, and I know that it might seem overwhelming for some. My best piece of advice is having fun! If you’re not having fun making this beautiful dinner for your family then something is off. This week on Menu Plan Monday I have all your bases covered. I’m here to make sure you’re prepared not just for the big feast, but for the whole week!

I think a good breakfast on Thanksgiving morning is just as important as the main meal. Some believe it’s best to wait to stuff your face later in the day, but breakfast is still the most important meal of the day. My Breakfast Bake is hearty, heartwarming, and a great companion for watching the Macy’s Thanksgiving Day Parade.

After the big day of feasting arrives, what do you do with everything the day after? My Thanksgiving Leftover Panini turns everything great about leftovers into one sandwich. You’ll start craving this all year long!

No Thanksgiving is complete without a slice of pumpkin pie. If you want to really blow away your guests, try making my Pumpkin Rolls! This cake is rolled around a thick layer of sweet cream cheese filling for a very impressive swirl. A dust of powdered sugar over the top makes it looks like the first snow has rolled through town. Here in Southern Utah, the temperatures can be in the triple digits during the summer, so when it falls below 60, we start to spend most of our time indoors. We’re not built for the cold weather! I’ll tell you what is built for cooler weather: this set of recipes on this week’s Menu Plan Monday #462. You are sure to enjoy these warm and comforting meals!

Nothing says cool-weather food like a warm bowl of homemade soup with a sandwich to accompany it. My Tomato Basil Soup and Grilled Mozzarella Sandwiches are built for days like these. It’s one of those classic food pairings that will never go out of style!

Next, give my Slow Cooker Creamy Chicken Noodle Soup a try. Serve this with a roll to sop up every bite. Both recipes stick to your ribs. You may end up just like a grizzly bear in the mountains and not come back out to see the sun for the rest of winter.

My Chocolate Marshmallow Cookies are rich, delicious, and worth staying in to make. This dessert is just about as cozy as it gets. Serve these cookies warm with a tall glass of milk and enjoy!
