Easter is just one week away, so this Menu Plan Monday is going to be extra delicious! You’ll notice that on Sunday, I’m sharing my personal favorite Easter recipes. This menu includes side dishes, and a main course you won’t want to miss—plus two bonus desserts at the end for your sweet tooth.

Looking for a main course to serve? Crock Pot Maple Brown Sugar Ham is a Lofthouse holiday staple. It is one of my most cherished recipes to serve for all big holidays, as it easily feeds between 12 to 15 people. With its generous size and flavorful, juicy meat, this ham makes the perfect centerpiece for any Easter table.

No Easter feast is complete without a delicious carrot side! My Garlic Roasted Carrots are oven-baked until tender, perfectly seasoned, and loaded with flavor. They pair beautifully with ham, turkey, chicken, or pot roast, making them a must-bake for your Easter menu. 

This week, I have two special treats to welcome the holiday. The Best Carrot Cake is a cinnamon-flavored cake filled with shredded carrots, sweet coconut, and topped with almond-scented cream cheese frosting! This cake is made without any nuts or fruit.

Tender chicken, hearty vegetables, and a creamy sauce come together in the slow cooker for an easy, hands-off dinner. Serve it with biscuits or puff pastry for that classic pot pie feel without all the fuss.

Next, it’s time for something creamy, cheesy, and utterly satisfying, and my Chicken Bacon Ranch Baked Penne fits the bill! This dish is loaded with tender chicken, crispy bacon, and a luscious ranch-infused cheese sauce, all baked to bubbly perfection. It’s a guaranteed crowd-pleaser and a good option for the nights when you need a little extra comfort.

My Baked Ham and Cheese Roll Ups are a great way to use succulent leftover ham from a big holiday meal, or you can use the deli meat in your fridge. Savory melted cheese and ham are rolled up into buttery dough and baked until golden brown. You can serve these in bulk if you’re planning on hosting a little get-together.

If there is one thing that I love adding to most dishes, it’s a sensational sauce. When I bake, cook, fry, or sauté dishes, I love to pair them with a delicious sauce. Whether it goes inside the recipe or on top afterward, a flavorful sauce is a great way to enhance any meal. This week on Menu Plan Monday, I’m featuring recipes that are for sure saucy!

When I think of a meal with sauce, I always think of salad. The dressing acts as a sauce that helps coat each delicious bite. My Steak Fajita Salad with Chipotle Ranch Dressing is a recipe I adore. It’s a great excuse to enjoy savory steak healthily, covered in our favorite dressing. There can never be enough Ranch dressing in the Lofthouse!

Next up are my Chipotle Ranch Burgers. These burgers are served with a homemade Chipotle Ranch that makes each juicy bite irresistible!

Many desserts have wonderful sauces, and this week’s dessert is no exception. My Easy Chocolate Lava Cakes are incredible mini cakes with a molten core of warm chocolate sauce. As soon as you cut into the cakes, the chocolate will come oozing out, which adds a layer of sweetness that is unbeatable.

I love getting into the kitchen and turning up the heat on traditional recipes. Bringing a little bit of warmth to the palate every now and again wakes up the senses. This week for Menu Plan Monday I am catering to the families that like to enjoy some heat every now and then. If you and your family you don’t prefer spice, don’t worry! I’ve also included a set of recipes that work well for those who prefer to keep things mild.

For a light lunch that is sure to pack a little punch, try my Southwest Chicken Caesar Wraps. This lunch takes all the traditional components of a Caesar salad, wraps it up in a tortilla, and infuses flavors of the Southwest. Don’t worry, you won’t break a sweat, but you may want a second wrap because they’re that delicious.

For a main course entree, I highly recommend trying my Sweet and Spicy Pork Chops. These juicy and spicy chops are always a hit when I serve them. Adults are sure to love these, and they’re a great new option for the kids to try!

When it comes to dessert, I shy away from spicy things because that just seems a bit too much. But one flavor that I do love in treats is mint! A hint of mint goes a long way and is a cool, refreshing way to end any meal. This week, I’m making my Asphalt Pie (a copycat recipe from Winger’s restaurant). This is one of my favorite desserts! We like to top ours with extra caramel and chocolate sauce. Yum!

This week, I am sharing a few recipes that are inspired by the beautiful country of Ireland. Being from Southern Utah has allowed me to live in some of the most incredible landscapes, but when I look at pictures of the coast of Ireland, I can’t wait to one day get on an airplane and visit. For Menu Plan Monday this week, I am delivering some of my most flavorful dishes that will transport your taste buds to the coastal cliffs of Ireland.

My Shepherd’s Pie recipe is so delicious. It’s packed with ground beef mixed with peas and carrots, and topped with homemade mashed potatoes and cheese. My kids beg me to make this all the time. I consider it to be one of my lucky recipes.

If you’re looking for the pot of gold at the end of the rainbow, then look no further. This dessert is just what you’ve been waiting for! My Shamrock Shake (Copycat) is a creamy and minty milkshake that is reminiscent of one you might find at a popular fast-food chain. This week for Menu Plan Monday #530 I am bringing you some of my family’s favorite recipes! All of these dinners have been served in my home many times, and are always a hit.

Let’s start with the most important meal of the day, breakfast! My Breakfast Enchiladas are a fantastic way to layer on the flavors right from the start of the day. Fluffy eggs, cheese, and bacon are wrapped in a flour tortilla and topped with homemade enchilada sauce!

For lunch, try my Turkey Ranch Club Wraps. Layers of turkey, bacon, lettuce, tomato, and light ranch dressing are magic together. These wraps are a great way to enjoy lunch guilt-free.

Now for my favorite meal of the day, dessert! I know dessert isn’t technically a meal per se, but with how tall and impressive this one is, it could very well be its own course. My Ho Ho Cake may sound like a dessert for Christmas, but it resembles one of everyone’s favorite grab-and-go sweet treats. This wonderful cake holds layers of vanilla frosting and is topped with a creamy chocolate frosting. It is sure to put a smile on anyone’s face!

You know those days/weeks where all you want to do is cuddle on the couch and get cozy? Sometimes you just need to pop some popcorn, put on a good movie and hang out with the family. That’s what’s going on with me this week, so my Menu Plan Monday is all about movie night!

What’s the perfect dinner for movie night? Pizza! A fresh slice of homemade pizza paired with an ice-cold beverage will make anybody happy. You and your family are going to love my Buffalo Chicken French Bread Pizza. The French bread base is the perfect crust to eat while watching a movie because you have so much to hold one to! Also, the buffalo heat isn’t too much. The temperature is 100% Lofthouse kid approved!

For something a little heartier, try my Mini BBQ Cheddar Meatloaves. They are filled with cheese and are so delicious. Serve with a side of mashed potatoes, and your family will go nuts! In a good way, of course.

Movie night would not be complete without popcorn. That buttery, salty snack brings everything together. This week I am not just sharing any ordinary recipe. My Marshmallow Popcorn will blow your mind! The salty crunch is still there, but then you add a fluffy, sweet marshmallow coating and you’ll have the best treat a movie could ask for. I hope that you enjoy your movie night at home this week, friends!
