We are at the peak of summer, and I don’t know about you, but I am sweating! Here in Southern Utah, it reaches over 100 degrees F. almost every day. You know what that means? Pool Party! Since we’ve had our pool installed our summers have completely changed, so has the number of kids, parents, and friends we host in our backyard. I love it! Hosting a get together is one of my favorite things. For Menu Plan Monday #499 I’m sharing my best recipes that are perfect so serve to anyone you may be having over!

Who doesn’t love a taco? That must be a hard person to find in a crowd. They’re practically a way of life here in the Lofthouse. On days with people coming and going, I love to make my Shrimp Taco Bites. You get every single bit of flavor from a traditional taco, but in a single bite. Each one has its own shrimp, and these things usually disappear the quickest when I have people over.

For those who aren’t a fan of seafood, try my Philly Cheesesteak Crescent Pinwheels. They are round, fluffy wheels that are stuffed with steak, cheese, onion, and more. They’re so cheesy, flavorful, and out of this world delicious!

I like to get creative with ways to enjoy treats you normally would around a campfire. What’s the first thing that comes to mind? S’mores! My S’mores Cookie Bars are amazing! Luckily, a campfire is not required to make these heavenly cookies. A tray of these gathers a crowd like no other! Now, I call that a win-win!

During these hot months I notice one thing about the eating habits of the Lofthouse crew. We tend to snack more throughout the day and then have one large meal. Especially on days we are out by the pool, or spending time with friends, snacks are usually the easiest thing to have around. For Menu Plan Monday #498, I want to make sure you have an arsenal of recipes for that one big meal. If you’re anything like the Lofthouse gang, you either need a big meal first thing in the morning to energize the day, or in the evening to refuel. 

My Baked Ham and Cheese Omelette is a protein-packed breakfast that will give your kids the energy they need for a full day of fun. I serve this with a glass of orange juice for the kids, and a warm cup of coffee for Kale. I enjoy Diet Coke with breakfast. Don’t judge me.

When it’s dinner time, and a large meal is needed, my One Pan Ranch Chicken and Veggies is a go-to. It’s a healthy and hearty way to give everyone their vegetables in a flavorful way. A meal like this is great for easy clean-up and fewer dishes.

Summertime means that there really is only one option for dessert: ice cream! And I don’t mean going through a drive-thru to get a chocolate-dipped cone. No. I am talking about real, homemade ice cream. Don’t sweat it, though, because my Easy Fudge Ripple Ice Cream is a breeze to make, and so yummy!

Who doesn’t love a good classic? Especially when it comes to food. I like to make sure that my kids get some of the same experiences I had as a kid, as well as some of their own. This week’s Menu Plan Monday is committed to creating new memories through some summertime favorites! These are all great recipes for when you have a casual Saturday at home, or if you’re headed to a fun BBQ. Backyard hangouts might be the best thing about this time of year, and I am here to make sure you don’t show up empty handed.

My Grilled Cheeseburger Wraps are a great way to enjoy the best “sandwich” of the summer. This wrap is also lower in calories, so you don’t have to feel guilty about enjoying a burger during swimsuit season.

If it’s time for a pool party, don’t forget the pizza! My Margherita Flatbread Pizza is light, flavorful, and totally cheesy. Enjoy a slice before jumping into the pool like a cannonball.

The best sound during the summer has to be the ice cream man making his way down the street. The music starts playing, and the kids take off to the street. I hope everyone had a wonderful holiday last week. We were able to hang out with family all day and it was absolute bliss for me. We ate out at every meal, so I am ready to get back into the kitchen! This week’s Menu Plan Monday is filled with homemade meal ideas, but without too much work. Some include using the grill, and others use the slow cooker, but all are delicious!

It’s this time of year when many are camping and enjoying the great outdoors. Whether you’re sleeping in a tent, cozy cabin, or your very own backyard, make sure to cook up my BBQ Chicken Foil Packs. Tender pieces of chicken with veggies and BBQ sauce. High class, or low class, they’re tasty no matter how you fire them up.

The Slow Cooker French Dip Sandwiches are a great way to set dinner on low and catch up on everything you’ve been meaning to do this week. 

My Strawberry Shortcake Sheet Cake is an easy way to make sure everyone can enjoy a slice, or two of this tasty dessert. A thin layer of Angel food cake is topped with fresh whipped cream, strawberry glaze, and sliced strawberries! It is a must-make in the summertime for me.

Here at the Lofthouse we are getting the grill fired up and the swimming pool ready so we can celebrate the 4^th of July! The whole family will be over this year, so I am making sure we are ready to celebrate properly. For Menu Plan Monday I am giving you a variety of options that may not be the classic fare. We may be grilling in our backyard, but I know some of you are looking for something a little different this year.

With the sun shining bright and the crew gathering around a picnic table, nothing helps a summer afternoon like my California Pasta Salad. Full of fresh vegetables, tender bowtie pasta noodles, and served with a light vinaigrette dressing. It really gets the appetite ready for a full day of eating.

If you’re hosting a more casual event, be sure to make my Sheet Pan Chicken Alfredo Pizza. It’s a great grab-and-go meal. Since there will be plenty of socializing happening, it will be easy to grab a slice and walk around carrying on conversations.

Do you want to know what will really be the talk of the party? Dessert! When the fireworks are blasting above, your tastebuds will be exploding with flavor. My Red, White, & Blue Berry Trifle was made specifically for this occasion! Soft white cake with layers of whipped cream and plenty of fresh blueberries, raspberries, and strawberries. Oh, my goodness, this treat alone is a reason to celebrate even without the holiday.
