Welcome to the end of April, as we head into May. Summer is right around the corner, and guess what the first holiday is we get to celebrate? Cinco De Mayo! This week for Menu Plan Monday, I am making sure that you have something delicious to eat, inspired by flavors south of the border, all week long.

Tacos are a special kind of love language here in the Lofthouse. I am going to share one of the best ones with you today. My Sweet Pork Tacos will make anyone drool. They are tender, flavorful, and will go down so easy you’ll need two or three more.

For something to brighten up the palate, try my Grilled Cilantro Lime Chicken. A piece fresh off the grill, paired with some rice and beans, is a great way to enjoy any night.

Sometimes you just crave certain foods, and there is no shame in satisfying those cravings. This week for Menu Plan Monday, I am sharing what I consider to be at the top of my personal favorites list. I love every single recipe that I share on my blog, but certain ones stick out for me that I just adore!

First off is my Szechuan Chicken. I am sure that most of you thought I was going to write about some sort of taco or Mexican dish, but no. This recipe is one that I hold near and dear to my heart. I created it with a friend of mine from back in the day.

When it comes to something light, bright, and flavorful, I will always turn to my recipe for The Best Strawberry Chicken Salad. It has everything I crave in the spring and summer time, right down to the poppyseed dressing.

Now for dessert, Easy No Bake Cheesecake will always be a favorite of mine. I adore a slice of New York cheesecake, but I’m on the other side of the country. This recipe not only satisfies that craving but it also saves my bank account from buying a plane ticket. This recipe is one of the easiest desserts to make. Only a small list of ingredients is needed, and a freezer to put it in. It is fabulous in so many ways.

I adore and love my husband, Kale. His birthday is tomorrow, so I want to celebrate him on this special Menu Plan Monday! Kale is my biggest supporter, the best date I’ve ever had, and of course the father to my children. He is truly the best and enjoys good food, like us all. I am going to share some of his favorite recipes with you today!

He and I have our usual date spots. We like to rotate through our favorite local restaurants, but when we first started dating, we would go to Winger’s. We love sticky fingers! My Sticky Chicken Finger Wraps are an homage to their recipe.

I’ve cooked a lot of homemade meals for Kale, and our kids, and I love it! One that I know he is sure to enjoy each time is my Stuffing-Topped Pork Chops. His eyes light up when he knows he’ll be getting them for dinner.

Kale is the best kind of man, and he’s also a simple man. I mean that in the best way. I can make his entire day with a chocolate chip cookie. So, I am going to make his whole week with my Chocolate Chip Skillet Cookie!

This cookie, fresh out of the oven with a scoop of ice cream, will make anyone fall in love with you. That is exactly what I plan to do with him every single day for the rest of my life. Cheers to you, Kale! I love you.
